Vegan Mayo

Vegan Mayo

A creamy lower fat substitute for store bought vegan mayonnaise.

Ingredients

  • 1-12.3 oz. pkg Mori Nu silken tofu, firm or extra firm
  • 1 tbsp sunflower seeds, raw and shelled (can sub cashews)*
  • 2 tsp lemon juice
  • 1 tsp apple cider vinegar
  • 1 tsp nutritional yeast
  • 1 tsp dijon mustard

Instructions

  1. Add all ingredients to a high speed blender and process until smooth, if you don't have a high speed blender you may want to soak the sunflower seeds in some water for an hour or so prior to blending,  being sure to drain before adding to the blender.

Notes:

Can be kept in the refrigerator up to a week. You may notice some separation. Just stir before using.


*Sunflower seeds or cashews can be omitted entirely for an even lower fat mayo.
