Butternut Squash Cheesy Sauce

Ingredients:

  • 1 10 oz. pkg. frozen butternut squash (or sub 2 cups fresh)
  • 3 tbsp nutritional yeast
  • 2 tbsp Quaker Oats Old-Fashioned Rolled Oats
  • 2 tsp white or yellow miso (can sub salt, to taste, if you use)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 cup water

Instructions:

  1. Cook squash according to package directions. I get the microwave in a bag type that makes this really easy. After squash is cooked, add all ingredients to a blender and process until smooth and creamy. If you are not using a high speed blender that can handle hot food, you may want to allow the squash to cool a little.
  2. NOTE: I use the oats and water in the place of plant milk. You can sub 1/2 cup any plant milk if you prefer.
