Thai Peanut Sauce

De-fatted powdered peanut flour makes this very low fat, but just as delicious. Pictured with a drizzle of Sweet Heat balsamic on top, next to some spring rolls.

Ingredients

  • 1 cup PB2 Pure Peanut Powder
  • 1 cup water
  • 4 dates, deglet noor (can sub 1-2 tbsp maple syrup)
  • 2 clove garlic
  • 1/4 cup soy sauce, low sodium (or tamari)
  • 1/4 cup rice vinegar
  • 2 tbsp rolled oats (to thicken)
  • 1/2 tsp sriracha (or to taste)
  • 1/2 inch piece fresh ginger (can sub 1/4 tsp ground)

Instructions

  1. Add all ingredients to a high speed blender and process until smooth. To adjust thickness,  can add more peanut flour, dates or rolled oats, keeping in mind more dates will make it sweeter. The oats will cause this to thicken more as it sits. 
  2. Keep in the refrigerator up to 5 days.
