Cauliflower/Veggie Taco "Meat"

This recipe is awesome as it, but can also be combined with a few more ingredients to make my Veggie Taco/Burrito Mix, or even a wonderful chili.
Ingredients:
- 12 oz. cauliflower, raw*
- 1/2 large onion
- 4-6 medium mushrooms
- 1 medium carrot
- 2 tsp. chili powder
- 2 tbsp. low sodium soy sauce or tamari
- 2 tsp. smoked paprika
- 1 1/2 tsp. garlic powder
- 1 tsp. cumin
- 1 tsp. onion powder
- 1 tsp. Mrs. Dash (R) spicy jalapeno
Instructions:
- Make cauliflower taco meat by pulsing cauliflower, onion, carrot and mushrooms in a food processor with an "S" blade until they are of a "rice" consistency. Be sure to not over process. You may need to do in multiple batches, depending on the size of your food processor.
- Mix together with soy sauce and seasonings.
- Spread out on a baking sheet lined with parchment paper, or a silpat mat and bake @ 350 for about 45 minutes, stirring and/or flipping mixture every 15 minutes.
Notes:
* You can find pre packaged riced cauliflower to make this easier. I buy the Costco frozen riced cauliflower and one packet is 12 oz.
