Cauliflower/Veggie Taco "Meat"

This recipe is awesome as it, but can also be combined with a few more ingredients to make my Veggie Taco/Burrito Mix, or even a wonderful chili.

Ingredients:

  • 12 oz. cauliflower, raw*
  • 1/2 large onion
  • 4-6 medium mushrooms
  • 1 medium carrot
  • 2 tsp. chili powder
  • 2 tbsp. low sodium soy sauce or tamari
  • 2 tsp. smoked paprika
  • 1 1/2 tsp. garlic powder
  • 1 tsp. cumin
  • 1 tsp. onion powder
  • 1 tsp. Mrs. Dash (R) spicy jalapeno

Instructions:

  1. Make cauliflower taco meat by pulsing cauliflower, onion, carrot and mushrooms in a food processor with an "S" blade until they are of a "rice" consistency. Be sure to not over process. You may need to do in multiple batches, depending on the size of your food processor.
  2. Mix together with soy sauce and seasonings.
  3. Spread out on a baking sheet lined with parchment paper, or a silpat mat and bake @ 350 for about 45 minutes, stirring and/or flipping mixture every 15 minutes.

Notes:

* You can find pre packaged riced cauliflower to make this easier. I buy the Costco frozen riced cauliflower and one packet is 12 oz.
