Carob Peanut Butter Pudding

Reminiscent of those "snack pack" puddings of childhood.

Ingredients

  • 2 cups cooked, mashed sweet potato
  • 1 cup plant milk
  • 2 tbsp carob powder
  • 2 tbsp PB2
  • 2 tbsp date syrup
  • 1 tbsp flax meal

Instructions

  1. Add all ingredients to a blender and process until smooth. Depending on your blender you may need to add a little more plant milk to process. 
  2. Spoon into 1/2 or 1 cup vessels and chill for a couple hours before enjoying.

Notes:

You can sub cocoa for the carob, but will have to increase the date syrup or other sweetener as carob powder is sweeter than cocoa powder.
