Fig Bliss Bites

Single serving sweet treat, snack or dessert. I intentionally only make one serving of this at a time ... just sayin'.

Ingredients:

  • 3/8 cup rolled oats
  • 4-5 figs (40 g) (I used Smyrna)
  • 1 tbsp almond butter
  • 1 tbsp date syrup
  • 1 - 3 tsp water

Instructions:

  1. Add rolled oats and figs to a food processor and pulse until fully crumbled.
  2. Add almond butter and date syrup and pulse again, adding water 1 tsp at a time until mixture begins to stick together. Be careful not to add too much water.
  3. When mixture starts to stick together you can stop the processor and scoop out and form into small bite sized balls. Can be eaten immediately, or, my favorite, chilled in the freezer for about 10 minutes first.

Notes:

I use my small Pampered Chef scoop to make these uniform in size.
