Mac 'n Cheese Italiano

Ingredients:
- 8 oz. whole wheat rotini (or other pasta)
- 2 cups cooked Italian veggie mix (or any you prefer)
- 1 1/2 cup oat cheese sauce (or any you prefer)
- 1 cup tofu ricotta
- 1/2 cup tofu sour cream
- 2 slices whole grain bread (for crumb topping)
Instructions:
- Cook pasta according to package directions. While pasta is cooking make bread crumbs by adding sliced bread to a blender or food processor and pulsing until they break down into crumbs. Set aside.
- Drain pasta and add to a large bowl. To the pasta add tofu ricotta, cheese sauce, sour cream and veggies. Stir to combine and distribute sauces evenly throughout.
- Pour into to a 2 quart baking dish and top with the bread crumbs.
- Bake @ 350 degrees for approx. 20-25 minutes or until heated through and bread crumbs start to brown. Serve topped with my fast, simple no oil marinara.
