Veggie Taco/Burrito Mix

This recipe utilizes makes a hearty mixture for tacos, taco salad, burritos, enchiladas, nachos, or even chili.

Ingredients:

  • 12 oz. cauliflower, raw*
  • 1/2 large onion
  • 4 mushrooms
  • 1 medium carrot
  • 2 tsp. chili powder
  • 2 tbsp. low sodium soy sauce
  • 2 tsp. smoked paprika
  • 1 1/2 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. cumin
  • 1 tsp. Mrs. Dash (R) spicy jalapeno
  • 1 14.5 oz. can black beans (no salt added)
  • 1 14 oz. can corn (or use frozen)
  • 1 4 oz. can mild green chilis

Instructions:

  1. Make cauliflower taco meat by pulsing cauliflower, onion, carrot and mushrooms in a food processor with an "S" blade until they are of a "rice" consistency. Be sure to not over process. You may need to do in multiple batches, depending on the size of your food processor.
  2. Mix riced veggies together with soy sauce and seasonings.
  3. Spread out on a baking sheet lined with parchment paper, or a silpat mat and bake @ 350 for about 45 minutes, stirring and/or flipping mixture every 15 minutes. This makes your cauliflower taco meat, which is awesome as is, but with a few more ingredients becomes super awesome.
  4. Drain the can of corn and the can of beans and add to a 3 quart or larger pot along with the cauliflower taco meat and the can of mild green chilis. Stir to combine, and heat on the stove over medium heat until heated throughout, stirring occasionally. **

Notes:

* You can find pre packaged riced cauliflower to make this easier. I buy the Costco frozen riced cauliflower and one packet is 12 oz. ** If you are not using this immediately, you can skip the heating and just place in the fridge after combining for easy meal prep throughout the week. If you want to turn this into chili, you can add one or two 14.5 oz. cans of diced fire roasted tomatoes and simmer on the stove top until heated through.
