BOMM Muffins (banana, oat, millet and molasses)

This is my variation of the Just Bananas muffin recipe from Chef AJ and Forks over Knives.

Ingredients

  • 1 cup rolled oats (not quick or instant)
  • 3 bananas
  • 1/4 cup millet
  • 1/2 cup applesauce, unsweetened
  • 1/8 cup molasses
  • 1 tbsp ground flax seed
  • 1 tsp cinnamon
  • 1 tsp apple cider vinegar
  • 1/2 tsp vanilla extract
  • 1/4 tsp turmeric (optional)
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda

Instructions

  1. Preheat oven to 350 degrees.
  2. Grind the millet into flour using a blender or food processor and add to a large bowl along with all the other dry ingredients. Stir to combine.
  3. In another bowl, mash the bananas and add applesauce and all other wet ingredients. Stir to combine.
  4. Add wet ingredients to the dry ingredient bowl and stir to combine all ingredients thoroughly. Allow batter to sit about 5 minutes.
  5. Distribute batter evenly into a muffin tin lined with silicon or parchment muffin cups and bake @ 350 degrees for about 20 minutes. Depending on your oven, you may want to check them at 18 minutes, and they may take as long as 22 minutes. Muffins are done when a toothpick inserted into the middle comes out clean. 
  6. Cool on a wire rack and enjoy!
