Carob Oat Bites

Yummy, sweet little guilt free treats.

Ingredients

  • 1/2 cup rolled oats
  • 1 oz walnuts
  • 1 tbsp PB2 or other powdered peanut butter
  • 1 tbsp carob powder (can sub cocoa but will be less sweet)
  • 2 tbsp date syrup
  • 1 tsp water or plant milk

Instructions

  1. Place oats, walnuts, PB2 and carob powder in a food processor and process until crumbly with some texture still left to the oats.
  2. Add date syrup and water (or plant milk) and process again until mixture starts sticking together. I found 1 tsp just the right amount of liquid, but if you need to add more, do so very sparingly. You don't want the mixture to be "wet", just sticky.
  3. When mixture starts to stick together you can stop the processor and scoop out and form into small bite- sized balls. Can be eaten immediately, or, my favorite, chilled in the freezer for about 15 minutes first.

Notes:

Store in the refrigerator ... but who are we kidding here? There won't be any leftovers to store!
